How to Make Gajar Ka Halwa: Step By Step

There are so many recipes of Gajar ka halwa available on the Internet. But the traditional way of making Carrot halwa is to simmer the carrots in milk, ghee, and sugar.

It is one of the most famous and tasty desserts in India. At home, we love to it with some poured rabdi overeat or you can add a scoop of vanilla ice cream and it tastes delicious.

In India when the winter season starts it is a kind of ritual of making Gajar ka halwa. This is always seen in the menu where it can be in the wedding, party or any other celebration Gajar ka halwa is the first choice in desserts for everyone.

Types of Methods to Prepare Gajar ka Halwa:

It is also known as Gajrela. We can also say it is like a carrot pudding. Generally, halwa is made with cereals, pulses, flour, or combinations of these ingredients but it can also be made with the choice of your favorite fruit or vegetable.

There are so many ways of making it, today I am going to share you three different methods of preparing Gajar ka Halwa. First one is the traditional way in which the grated carrots are cooked in milk and then fried with ghee.

And the second method is the quick and easy one where the carrots are cooked in a pressure cooker with milk until they get mashy. It will reduce a lot of cooking time and hard work because you don’t need to grate the carrots. The third method is to prepare it with condensed milk and khoya.

For this method, you don’t need to add milk to the halwa. You just need condensed milk and khoya it will taste heavenly delicious. In this method, grated carrots are cooked in condensed milk and then the khoya will be added and mixed

Make sure the carrots you are using are not fibrous, stringy, and hard. Use red carrots because they are juicy and tender and the last thing is that the amount of sugar we are using is depending upon your carrot choice you may have to increase the amount of sugar or decrease it. You can also make this with black or orange carrots.

Traditional style of Gajar ka halwa

Ingredients:

  1. Carrots- 500 gms
  2. Ghee- 5 tbsp
  3. Cardamom powder- 1 ½ tsp
  4. Milk- 1000 ml
  5. Almonds- 5 chopped
  6. Pistachios- 6-7 chopped
  7. Cashews- 5-6 chopped
  8. Raisins- 1 ½ tbsp.

Preparations:

  1. Wash 500 grams of carrots under the running water.
  2. Peel the carrots, grate them, and put them aside.
  3. Take a pan to add 1 tbsp of Ghee.
  4. Add chopped pistachios, almonds, raisins, and cashews into the ghee.
  5. Roast them for 1 or 2 minutes and keep them aside.

How to prepare Gajar ka halwa

  1. Take a Kadai, add milk to it and cook it on low heat.

Make sure you are using a heavy bottom pan.

  1. When the milk starts boiling add carrots to the milk.
  2. After half an hour or 45 minutes, carrots will get soft and the milk started to reduce.
  3. When the milk is evaporated and the carrots are soft then add sugar to it.
  4. After adding the sugar it will melt and get liquidy.
  5. Make sure to absorb all the sugar syrup in the carrots.
  6. It’s time to add ghee. Pour ghee into it.
  7. After adding ghee it will start leaving sides of the Kadai.
  8. Ad 1 tsp Cardamom powder.
  9. Your traditional style Gajar ka Halwa is ready to eat.

Quick and easy method of preparing Gajar ka halwa.

Ingredients:

  1. Carrots- 500 gms
  2. Ghee- 5 tbsp
  3. Cardamom powder- 1 ½ tsp
  4. Milk- 600 ml
  5. Almonds- 5 chopped
  6. Pistachios- 6-7 chopped
  7. Cashews- 5-6 chopped
  8. Raisins- 1 ½ tbsp.
Recipe:
  1. Take 500 grams of carrots peel and wash them with clean water.
  2. Chop them roughly or just slice them into 4 parts.
  3. Take a pressure cooker and put the chopped carrots in it.
  4. Add 1 glass of milk to the pressure cooker.
  5. Put on the lid, turn on the flame and cook it on medium flame until 3 whistles.
  6. After 3 whistles come do not open it.
  7. Leave it to depressurize naturally.
  8. After 1-hour of pressure cook will be depressurized naturally.
  9. Remove the lid and turn the flame on.
  10. Take a spoon or spatula and start mashing the carrots.
  11. After the carrots are properly mashed add the remaining milk and cook it until all the milk is evaporated.
  12. Add sugar to the cooked carrots.
  13. At this stage don’t stop mixing because there are high chances of carrots getting burned.
  14. Add dry fruits at this stage so that they will remain crispy.
  15. Add the cardamom powder

Easy and quick Gajrela is ready. Serve it hot with garnished nuts.

Gajar ka halwa with condensed milk and Khoya

Ingredients:

  1. Carrots- 500 gms
  2. Ghee- 5 tbsp
  3. Cardamom powder- 1 ½ tsp
  4. Condensed milk- ½ tin or ½ cup and 2 tbsp
  5. Almonds- 5 chopped
  6. Pistachios- 6-7 chopped
  7. Raisins- 1 ½ tbsp.

Recipe:

  1. Wash and peel the red carrots. Grate them with a hand grater or you can use a food processor. Make sure to grate them finely.
  2. Add 1 tbsp ghee and heat the pan. Add the chopped dry fruits to the heated ghee.
  3. Roast them until they become aromatic and lightly golden. Remove them on a plate.
  4. Add grated carrots to the same pan and saute them for 2-3 minutes.
  5. Pour condensed milk into the sauteed Carrots.
  6. Cook them well on medium heat. Carrots will start to release the moisture.
  7. After cooking carrots in condensed milk for 10-12 minutes add khoya.
  8. And cook it for 15 minutes more and add ghee.
  9. After carrots absorbed all the liquid and carrots will start leaving the sides then add cardamom powder.
  10. Turn off the flame and garnish it with roasted dry fruits.
